Without even needing to read the article (will do it later if I get time) I can already say it still fits with what I said earlier.  Many species of fish have the ability to change/alter their coloration based on their surroundings, some more so than others.  Its basically a form of camouflage.  Also, the different light spectrum found in various bulbs and types of lighting  contributes to how their bodies process various vitamins and minerals, thus changes in their appearance/coloration happen.  The same thing applies when you're working with light vs dark situations.  The way the body processes various nutrients changes because organ functions are also affected by light vs dark as well as the various spectrum ranges.  Some species are more affected by this than others.  There is also a genetic link to some of these changes, which is why some species are more prone to these things than others.  (angelfish vs guppy or crayfish vs shrimp)  Other
things that can have effect on coloration are oxygen content, mineral content in the water supply, foods, and even temperature.  There is a lot to factor into something like this.  Do the same experiments with other species and you will see more change in some, less change in others. 
If you think about it, people have the same ability to some degree.  Take someone who spends more time in the sun vs someone who spends more time in the dark.  Those who spend more time in the dark tend to have more pale skin, and this applies to any race, but is more noticeable in some than others.  A person who is very light skinned is going to show this effect much more obviously than a person who has naturally dark skin or someone who is African American... but the changes are still there.  Some people tan vs some who burn, vs some who only end up with darker freckles or even skin cancer...

The amount of light and type of light any animal is exposed to directly effects how their entire bodies function.

Dawn,

I completely understand what you are saying - my betta fish can look orange in one light and purple or green in another.

But the thing with the angelfish or crayfish is the actual color of their bodies changes over the course of months or if they were in certain lights since hatching.
